An important point to remember is, while you are level 5, you wish to go forward and train in these so which you can start leveling your professions as your character levels. There is absolutely nothing worse than choosing a gathering profession later inside your character's leveling career and owning to roam close to searching for ore or herbs for several hours on end to level your skills.
